Welcome back to posting, and a great recipe to start!!! Might I suggest another sausage to use - Original Brat Hans. They are all natural, no preservatives, antibiotics or added hormones! Since you were buying locally I figured all-natural was important to you. I'm looking forward to future posts!

David, thanks for reading & one day would love to try your sausage. Is there an andouille? I would definitely give it a review here if I had some:) although brat isn't really right for a gumbo.. I would prefer a more natural sausage and love to steer clear of nitrates which admittedly Veron's does contain. It is a nice family business here and they don't use corn syrup etc. which other brands do. Every single local maker's smoked andouille sausage does unless someone here in NOLA can tell me otherwise. Just have to shop practically when you have 2 babes and are making gumbo as much as I do. We figure anyone's gumbo here locally is going to have nitrates and our kids don't eat the sausage bits anyhow. I will keep eye peeled for options here in NO.

Serena, this wasn't the best photo I had but it worked ok for right then. I will also make a green gumbo post since that gumbo was sorta mind-blowing for Matt & I.

Amy, give Bob's Red Mill GF flour a go & let me know how it comes out. I have heard good things.
Also, my good friend Sara Roahen just had her cookbook come out. I will have to make a post here about it. It's the Southern Foodways Alliance Community Cookbook w forward by Alton Brown. There is a very tempting recipe within for a duck gumbo. Now you just know I have to make it!
